Somehow I'd pictured "Giant Risk" as being kind of like Giant Chess, with actual people standing in for the gamepieces.

That gets out of hand at the endgame, when you try to cram 157 people into Greenland and go on a tear through North and South America... although with enough whiskey, you just might get people to do it. :)

The local SF club used to play "Jupiter Risk" You place 3 (or more) Risk boards edge to edge. From there the details are fuzzy in my mind (it's been 25 years or so)
